Thanksgiving Leftovers:  WHAT TO DO WITH ALL THE LEFTOVERS
 
 
 
Pot Pie
 
3 cups Turkey or Ham ( or a combo of both)
1 cup vegetables (green bean casserole, corn, peas or a mixture)
1cup stuffing
2-3 cups mashed potato (for topping)
1/2 cup celery, chopped
1/2 chopped carrots
1/2 medium onion chopped
6 tablespoons flour
1 cup chicken stock
1/4 cup olive oil
1/4 Teaspoon minced garlic salt and pepper to taste
1 1/2 cups milk (skim, 2% or whole) Chicken stock is a good substitute also
 
 
In medium saucepan, saute carrots, onions, celery and garlic with olive oil until carrots are tender, season with salt and pepper. Add flour and stir until blended. Slowly whisk in milk (or stock) until mixture thickens (about 3-4 min). Mix remainder of ingredients (except mashed potato's) with sauce, and place  in a 9 by 11 casserole dish. Top with mashed potato's,, drizzle with olive oil and bake at 375 until it browns, approx 35-40 minutes, Top with left over gravy and enjoy!
